After you have decided on a party theme, coordinating your delicious party food around the theme is a great way to keep the fun going – and impress all your guests. Our Little Cowgirl party theme is the perfect inspiration for this Hungry Cowgirl Barbacoa Beef Recipe.
Easy to make ahead of time and convenient to leave out, saving the clean up for after your guests leave, this hot beef sandwich has a just a little kick but that can be revved up as your guests build their sandwich – simply offer an extra bowl of jalapenos and they can add a little heat to their individual sandwich. Hungry yet?
Hungry Cowgirl Barbacoa Beef (Serves 12 sandwiches, can easily be doubled)
3 lbs. beef roast
1 Can of Rotel Diced Tomatoes & Green Chiles, (I used original but you can up your fire by using hot)
1 onion, peeled and cut into large chunks
2 T. minced garlic, or a few garlic cloves, smashed
1 T. ground Cumin
1 T. ground Cloves
3 Bay Leaves
1 T. Olive Oil
1/2 Cup Water (or juice from canned jalapenos)
Salt and pepper to taste
Trim fat off beef roast and place all ingredients in the crock pot. You can do this the night before your party and leave it in the fridge for morning. Or, better yet, cook it the weekend before, freeze and have it ready to go a few hours before your guests arrive for a no-fuss luncheon menu.
Cook for 8-10 hours on low. Shred beef with a fork. If it seems to have a lot of liquid, you can drain some of this off before your guests get there – that will make your buffet line move a little faster since no one wants soggy buns!
