Sweeten up a teddy bear baby shower with blue-“bear”-y muffins! As easy to make as they are to decorate, blueberry muffins – especially in miniature form – are a delightfully simple snack idea for teddy bear-themed baby showers. Just add a themed teddy bear “flag” to each one (which we created using non-personalized teddy bear return address labels from BigDotofHappiness.com) and you’ll have a plate full of delicious, themed treats.
Yields: 24 mini muffins
- 1 ½ cups all-purpose flour
- ¾ cups white sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup fresh blueberries
Directions:
1. Preheat oven to 400 degrees, then grease a mini muffin tin or line with mini cupcake liners.
2. Combine the flour, sugar, salt and baking powder in a large bowl.
3. Pour the vegetable oil into a one-cup measuring cup, then mix in the egg and enough milk to fill the cup. Mix this into your flour mixture.
4. Fold in blueberries.
5. Fill muffin cups to the top and bake for 20-25 minutes.
Store your mini blueberry muffins in an air-tight container until a few hours before your baby shower. When you’re ready, cut thin wooden skewers into 2-inch sections and fold a non-personalized teddy bear return address label around the top of each one. Insert your teddy bear “flags” into each muffin and arrange on a pretty plate. Your guests will love the look of these adorable treats!
