A classic dessert any time of the year, carrot cake is a particularly popular recipe for fall parties… and as one Big Dotter demonstrates here, it can be easily dressed up to match fall party décor! Big Dot of Happiness Design Expert Dorthea submitted this eye-catching fall dessert in a recent bake-off, and as you can see, she put her creative abilities to work! After decorating her round carrot cake with cream cheese frosting, Dorthea applied glitter to the leaves of a fall wreath, then adjusted the wreath so it wrapped around the cake. By adding a pumpkin, more leaves and a sprig of orange and red berries to the top, Dorthea’s carrot cake was complete… and absolutely stunning! It’s no surprise her entry was voted “Best Overall.” Read on to learn how Dorthea got her cake to taste as delicious as it looked!
Ingredients:
- 1 ½ cups granulated sugar
- 1 cup vegetable oil
- 3 eggs
- ½ cup water
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- ½ teaspoon salt
- 3 cups shredded carrots
- 2 cans cream cheese frosting
Directions:
- Heat oven to 350 degrees and grease an 8-inch round pan with butter.
- Cut a slightly less than 8-inch circle out of wax paper and place the circle inside your round pan. Lightly butter and flour the side that is facing up (this will prevent a mess when removing the cake from the pan later).
- In a large bowl, beat the sugar, oil, eggs and water on low until blended.
- Add flour, cinnamon, baking soda, vanilla and salt, and beat on low for about 1 minute.
- Stir in the carrots, then pour your mixture into the pan.
- Bake for about 30 minutes, then set aside to cool.
- Once the cake has cooled, flip the pan over and gently shake until the cake slides free from the pan.
- Carefully peel the wax paper off the cake, and flip it back over.
- Frost the entire cake, decorate and enjoy!
