Is there anything more quintessentially “kid” than peanut butter and jelly sandwiches?
I think not. Which is why, when I came across a recipe for these yummy Peanut Butter
Jelly Bites, I thought “Boy, these would be exactly perfect treats for a kids birthday
party!”

Truth be told, however, these little guys would be exactly perfect treats for just about
any occasion (like, say, Tuesday)…because they are every bit as delicious as a classic
peanut butter and jelly sandwich, and who doesn’t love a good PB&J? Chewy peanut
butter cookie cups filled with tasty jam? Yes. Please.

Peanut Butter Jelly Bites

Since these bites are filled with (yummy, delicious) gooey jam, they are not exactly
ideal for packaging up as party favors – better to let the kids devour them at the party.
If you’re feeling extra creative and detail-oriented-y, you can fill the cookie cups with
multiple jam flavors and then label your platters accordingly. Perhaps you could use
some themed name tags from Big Dot to make your labels?

½ cup butter, room temperature
½ cup peanut butter
½ cup granulated sugar
½ cup (packed) brown sugar
1 egg
1 ¼ cups all purpose flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
Your favorite jam or jelly

With an electric mixer, beat together the butter, peanut butter, granulated sugar and
brown sugar until the mixture is light and fluffy. Add the egg and mix until it’s well-
incorporated. In a separate bowl, whisk together the dry ingredients; stir them into the
peanut butter mixture until everything is well-combined. Chill the dough while your oven
preheats.

Heat your oven to 375º. Using a small scoop or a spoon, portion 1 tablespoon of
dough into each cup of a mini muffin tin. Bake them 12-14 minutes, until the edges are
browned and crackled—the centers will not be completely set. Remove the pan from
the oven and use the end of a wooden spoon to make a small well in the center of each
cookie. Fill each well with jam or jelly, then remove the cookies from the pan using the
edge of a thin knife, and transfer them to a rack to cool completely. Makes about 50
cookies.
